The house

Two people, one oven

Nino makes the dough and works the peel. Amandine runs the counter, the room and the boxes. That is more or less the whole team.

The oven got here before we did, in 2019: it was already there under the plaster, in what had been a bakery since 1954. We took the wall down, relit the floor, and spent three months working out how it heated.

We have never lengthened the card since. We lengthened the dough instead: thirty-six hours at the start, seventy-two now. That is the only thing that has really changed.

The big tables

You eat together, at tables you share. A group of ten gets seated in pieces, not in a private room — there isn’t one. Some people hate it, most end up talking to their neighbours.
